====== Einkorn Chocolate Chip Cookies ======

===== Ingredients =====

  * 8 TB (= 1 stick) unsalted butter, room temp
  * 1/2 cup brown sugar, packed
  * 1/4 cup granulated sugar
  * 2 eggs
  * 1 1/2 tsp vanilla extract
  * 2 1/2 cups einkorn flour
  * 1 tsp salt
  * 1/2 tsp baking soda
  * 1/2 tsp baking powder (the equivalent to 1 tsp baking power is 1/4 baking soda and 1/2 tsp vinegar)
  * 3/4 cup chopped walnuts
  * 1/4 cup chocolate chips

===== Preparation =====

  * Preheat oven to 350°F
  * Mix butter and sugars
  * Add eggs one at a time
  * Add vanilla extract
  * Sift in flour, with salt, baking soda, and baking power mixed into flour
  * Add in chips and/or walnuts
  * WAIT 15 MINUTES (for einkorn to absorb water)
  * Bake 9-12 minutes, not browned.  The yellow color is normal for einkorn.
