Platanos Maduros by: Maria Josefa Lluria de O'Higgins, " A Taste of Old Cuba" Ingredients * 3 large, very ripe (black) plantains * Vegetable oil Preparation - Peel the plantains as you would bananas, and slice each one on the diagonal into 1/2 inch slices. - Pour about 1 inch of oil into a large skillet and heat it over medium-high heat. you must keep it hot or else the platanos will absorb too much oil. - Fry the plantain slices till they are almost lack but not burned. - Drain them on paper towels. Serve immediately, or keep warm in warm oven till serving time. Can sprinkle with a little salt.
