Tossed Greens and Grapes Salad - 3/4 cup olive oil - 1/4 cup red wine vinegar - 1 1/2 tablespoon Dijon mustard - 1 1/2 teaspoon honey - 1/8 teaspoon salt - 1/8 teaspoon pepper - 1 (5 ounce) package Spring greens or baby greens - 2 cups seedless red grapes, halved and rinsed well - 1 cup salted, roasted cashews - 2 ounces Manchego cheese, shaved * Stir together the first six ingredients in a large serving bowl. * Add spring greens and next three ingredients, and toss. * Serve immediately.
