__Tzatziki sauce Ingredients: * 2 cups grated cucumber (approx 1 medium-large sized cucumber) * 1 1/2 cups plain greek yogurt * 2 Tbsp extra-virgin olive oil * 2 Tbsp fresh minced dill * 1 Tbsp lemon juice (or white wine vinegar, but lemon juice adds more flavor) * 1-3 cloves minced garlic * 1/2 tsp sea salt Instructions: - Squeeze grated cucumber over sink until most of the water is out, then press between paper towels to get remaining moisture out of them. - Add yogurt, olive oil, herbs, lemon juice, garlic, and salt to bowl and stir to mix. Let the mixture rest for 5-15 minutes to allow the flavors to mix. Taste and add additional herbs, lemon, or salt as necessary. - Add cucumber to bowl and mix. Serve immediately or chill for later. Keeps a few days. Notes: - Was delicious, but I definitely added more seasoning. I originally used white vinegar but wanted more flavor so added the lemon.
