 +
+Pumpkin Spice Chia Seed Pudding, from Mountain Rose Herbs
 +Makes about 1 1/2 cups.
 +
 +**Ingredients**
 +
+  * 1 cup organic oat milk or milk choice
+  * 2 Tbsp. (or to taste) organic agave or maple syrup
 +  * 3 Tbsp. organic pumpkin Puree
+  * 1/2 tsp. organic pumpkin pie spice
 +  * 1/2 tsp. organic vanilla extract
 +  * 1 pinch sea salt
 +  * 1/4 cup organic chia seeds
 +
 +
 +**Directions**
 +
+  - Mix milk, agave, pumpkin, pumpkin pie spice, vanilla, and salt in a blender until fully combined.
+  - Pour into a container and add chia seeds while mixing with whisk or fork.
+  - Let chia seed mixture sit for 30 minutes, stirring every 10 minutes or so as it begins to thicken.
+  - Seal container and set in fridge for at least 3 hours, until desired consistency is reached.
+  - Transfer to serving dish and garnish with toppings of choice!
 +
 +Pro Tips:
 +
+  - For a standalone pumpkin spice experience, you can omit the canned pumpkin from this recipe without needing to make any major changes to the other proportions.
+  - Chia seed pudding makes a great morning meal! Make this the recipe before bed for a seasonal breakfast the next day.
+  - You can “revitalize” overly thick chia pudding by stirring in a splash of milk before eating.
+  - Pumpkin fans may want to combine some leftover pumpkin puree with a bit of syrup and pumpkin pie spice to create a quick and easy topping for your pudding.
