Pumpkin Spice Chia Seed Pudding, from Mountain Rose Herbs Makes about 1 1/2 cups.

Ingredients

  • 1 cup organic oat milk or milk choice
  • 2 Tbsp. (or to taste) organic agave or maple syrup
  • 3 Tbsp. organic pumpkin Puree
  • 1/2 tsp. organic pumpkin pie spice
  • 1/2 tsp. organic vanilla extract
  • 1 pinch sea salt
  • 1/4 cup organic chia seeds

Directions

  1. Mix milk, agave, pumpkin, pumpkin pie spice, vanilla, and salt in a blender until fully combined.
  2. Pour into a container and add chia seeds while mixing with whisk or fork.
  3. Let chia seed mixture sit for 30 minutes, stirring every 10 minutes or so as it begins to thicken.
  4. Seal container and set in fridge for at least 3 hours, until desired consistency is reached.
  5. Transfer to serving dish and garnish with toppings of choice!

Pro Tips:

  1. For a standalone pumpkin spice experience, you can omit the canned pumpkin from this recipe without needing to make any major changes to the other proportions.
  2. Chia seed pudding makes a great morning meal! Make this the recipe before bed for a seasonal breakfast the next day.
  3. You can “revitalize” overly thick chia pudding by stirring in a splash of milk before eating.
  4. Pumpkin fans may want to combine some leftover pumpkin puree with a bit of syrup and pumpkin pie spice to create a quick and easy topping for your pudding.
