Miso salmon!

Glaze:

  • Tablespoon miso paste
  • Tablespoon soy sauce
  • 1.5 tsp - 1 Tbsp honey
  • “ ” rice wine vinegar
  • 1 tsp gochugang or chili flakes in oil
  • 1-3 cloves of chopped or grated garlic
  • grated ginger
  • 1 tsp sesame oil
  • 1-2 chopped scallions

Mix glaze together!

To cook:

  1. Take salmon out and salt + pepper both sides
  2. Heat oil in pan (cast iron or other high heat pan)
  3. Cook @ medium (maybe medium-high heat) non-skin side down. Place salmon on pan and don't move around, let cook for 3-4 minutes until fish looks cooked about halfway through and there is a nice brown on the side that is face down. Flip with tongs or a spatula and cook other side for 3-4 minutes. Towards the end of cooking lower heat to med-low and drizzle some of the sauce on top (sauce might burn if it is too hot because of the honey). Continue to spoon glaze over the salmon as it cooks for the last few minutes.
  4. Enjoy!

*IF salmon hasn't cooked enough on the inside (poke with fork to check) after you add the sauce, lower to med-low heat and cover pan with a lid. Let simmer like this for an additional 5 minutes, but don't let the sauce burn.
