Butter Chicken (vegetarian)
Marinade for chicken/tofu:
1 Tbsp cornstarch
1-2 Tbsp garam or tandoori masala
1/2 tsp ground ginger
1/2 tsp garlic powder
1/2 tsp turmeric
Optional: curry powder, coconut oil, chili powder, salt
Sauce
2 Tbsp oil (olive or coconut)
1 onion, diced
14 oz can crushed tomatoes
1 tsp tomato paste
2 Tbsp ghee or butter
1 1/2 Tbsp garlic, minced
1 Tbsp ginger, minced or finely grated
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garam masala
1 tsp tandoori masala
1 teaspoon coriander
1 tsp red chili powder (adjust to your taste preference)
1 tsp sugar
1-2 tsp salt, to taste
1 cup of heavy or thickened cream (or evaporated milk)
1/2 teaspoon kasoori methi (or dried fenugreek leaves)
