Red Beans and Rice (Congri, Tampa style) (Nana's recipe)
Ingredients
1 lb dried red kidney beans
Salt pork or ham hock slice (or tosino)
1 chorizo
Ham, 1 piece
Olive oil
Garlic, 2 to 3 cloves, minced
1 medium onion, diced
1 medium bell pepper, diced
4 oz tomato sauce
2 or 3 medium potatoes, peeled and cut into chunks
White or brown rice
Instructions
Rinse and pick over the red beans, then soak overnight in water to cover.
Pour out the water, add water to cover, then add salt pork, chorizo, and ham; bring to a boil, then simmer on low till beans are soft (1 -1 1/2 hours).
Meanwhile, make a sofrito with the olive oil, onion, bell pepper and garlic. Cook till onion is translucent.
Add the sofrito and tomato sauce to the beans, then add potatoes and cook til potatoes are soft. Remove the chorizo and ham and dice them, then add back into beans.
Serve over white rice. Optional: add hot sauce.
