Salmon Marinades:

1. Sesame marinade:

  • 4 tablespoons sesami oil
  • 2 tablespoons tamari or soy sauce
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 3 green onions (scallions), chopped

Blend all ingredients and pour over salmon fillets or steaks to marinade.

2. Honey Lemon

  • 4 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • 1 tablespoon mirin (sweet rice wine) or rice wine vinegar
  • 1 tablespoon honey
  • juice of half lemon
  • 2 tablespoons fresh basil, thinly sliced
  • salt, pepper to taste.

Blend all ingredients and pour over salmon to marinate.

3. Broiled Salmon Steaks Marinade, from “The Frugal Gourmet”

  • 2 10-ounce salmon steaks
  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 1/8 cup lemon juice
  • 1/2 teaspoon dried dill weed
  • ground clove (a sprinkle)

Mix well and pour over steaks to marinade. Broil steaks on both sides till done.

4. Salmon al Giuliese from “The Mediterranean Kitchen”

For each serving:

  • 1 tablespoon olive oil
  • 1 teaspoon fresh lemon juice
  • 5 ounces salmon fillet
  • salt, pepper
  • 1/2 cup toasted bread crumbs
  • 1/2 tablespoons capers
  • 1 tablespoon unsalted butter

Preheat oven to 450 to 500. Mix oil and juice and brush on both sides of salmon. Sprinkle with salt and pepper. Cover the salmon with bread crumbs then add capers and butter. Bake 5 to 7 minutes.
