__Tzatziki sauce


  • 2 cups grated cucumber (approx 1 medium-large sized cucumber)
  • 1 1/2 cups plain greek yogurt
  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp fresh minced dill
  • 1 Tbsp lemon juice (or white wine vinegar, but lemon juice adds more flavor)
  • 1-3 cloves minced garlic
  • 1/2 tsp sea salt


  1. Squeeze grated cucumber over sink until most of the water is out, then press between paper towels to get remaining moisture out of them.
  2. Add yogurt, olive oil, herbs, lemon juice, garlic, and salt to bowl and stir to mix. Let the mixture rest for 5-15 minutes to allow the flavors to mix. Taste and add additional herbs, lemon, or salt as necessary.
  3. Add cucumber to bowl and mix. Serve immediately or chill for later. Keeps a few days.

Notes: - Was delicious, but I definitely added more seasoning. I originally used white vinegar but wanted more flavor so added the lemon.
