Tossed Greens and Grapes Salad
 3/4 cup olive oil
 
 1/4 cup red wine vinegar
 
 1 1/2 tablespoon Dijon mustard
 
 1 1/2 teaspoon honey
 
 1/8 teaspoon salt
 
 1/8 teaspoon pepper
 
 1 (5 ounce) package Spring greens or baby greens
 
 2 cups seedless red grapes, halved and rinsed well
 
 1 cup salted, roasted cashews
 
 2 ounces Manchego cheese, shaved
 
 Stir together the first six ingredients in a large serving bowl.
 
 Add spring greens and next three ingredients, and toss.
 
 Serve immediately.
