Tossed Greens and Grapes Salad

  1. 3/4 cup olive oil
  2. 1/4 cup red wine vinegar
  3. 1 1/2 tablespoon Dijon mustard
  4. 1 1/2 teaspoon honey
  5. 1/8 teaspoon salt
  6. 1/8 teaspoon pepper
  7. 1 (5 ounce) package Spring greens or baby greens
  8. 2 cups seedless red grapes, halved and rinsed well
  9. 1 cup salted, roasted cashews
  10. 2 ounces Manchego cheese, shaved
  • Stir together the first six ingredients in a large serving bowl.
  • Add spring greens and next three ingredients, and toss.
  • Serve immediately.
